Spring Beauty is a member of the Purslane Family
(Portulacaceae) that blooms very early in the spring. It is a small pink or whitish flower that grows close to the ground in loose clusters in moist woods and thickets. This flower makes a spectacular display when found in large groups carpeting the forest floor.
Found from Ontario and Quebec south to Georgia and west to Texas, the eastern half of North America is covered with this tiny, lovely flower in the Spring.
Early colonists used the Underground tubers from this plant as a food source. It has a sweet, chestnut-like flavor.
